Printable Recipe: Christmas Krispies

The recipe

Ingredients

  • 6 cups of puffed rice cerealย 

  • 3 tablespoons of butter (or plant-based butter)

  • 3 teaspoons of vanilla extract

  • 50 regular sized marshmallows or 6 cups of mini marshmallows (vegan marshmallows will work too!)

  • 400g of white chocolate (or vegan white chocolate)

  • Red or green food colouring

Pick your extras

  • Red and green sprinkles

  • Chopped candy cane

  • Cinnamon

  • Peppermint extract

  • Dried cranberries

  • Any Christmas candy

Instructions

  1. Line a 9x9" square tin with greaseproof paper and leave to the side.

  2. Add the marshmallows, butter and vanilla extract to a pan and stir until fully melted (this also would be a good time to add in cinnamon or peppermint extract, if you choose).*

  3. Pour in the puffed rice cereal and fold gently to combine.

  4. Sprinkle in any of your chosen extras.

  5. Gently press the mixture into your tin and put aside.

  6. Divide the chocolate in two bowls (250g in one bowl and 150g in another)

  7. Melt the chocolate in the microwave or on the stove. If youโ€™re melting it on the stove, place the chocolate in a heatproof bowl and put it in a pot filled with a little water. Let the water simmer gently underneath until the chocolate fully melts.*

  8. When your chocolate melts, add your red or green food colouring to the bowl with 150g of chocolate in it.

  9. Pour the white chocolate in an even layer on top of your krispie mixture.*

  10. Spoon 4โ€“5 pools of red or green chocolate on top of the white chocolate.*

  11. Take a cocktail stick and create a swirling marble effect with the red or green chocolate.

  12. Pop in the fridge for at least 2 hours.

  13. Once the chocolate is set, take your treats out of the fridge and cut into squares.*
